pink and red: Chocolate Peanut Butter Balls

Moving on to the appropriate holiday…
So last week I got a call from Mazda reminding me I am due for an oil change. This is how the conversation went:
Mazda: Would you like to book an appointment?
Me: Sure. What evenings are you open late?
Mazda: Thursday’s.
Me: Thursdays are great.
Mazda: How about the 14th?
Me: That’s fine.
…crickets….
Mazda: Umm are you sure?
Apparently oil changes are not a hot date option for Valentine’s.
Regardless of whether you have a date with your man, planning a single girls night, or boycotting the day altogether, any holiday is an excuse for some baking! I have for you my Chocolate Peanut Butter balls recipe. This is a recipe that I have perfected over time and is ALWAYS a hit. The best thing about this recipe is that you can adjust it according to your preferences. I like mine to have an equal balance of crispy and peanut butter, but my sister likes to make hers with an overdose of peanut butter. There is no wrong way to make these! I find it’s easiest to make these over two days.
In a mixing bowl, combine 2 cups Rice Krispies and 1 and 1/2 cups icing sugar.
Melt 1/2 cup butter.
Mix butter into Rice Krispie mixture.
Add 1 and 1/4 cup peanut butter.
Once thoroughly mixed, mold into small balls with hands. Place on cookie sheet lined with parchment paper.
Place in fridge overnight (or for at least 1 hour).
Melt chocolate wafers in double boiler. You can also melt in microwave but be careful with this method and go slow as chocolate can burn and lump quickly.
Roll each peanut butter ball in chocolate. Since chocolate is hot, do this fairly quickly or else the ball will start to fall apart.
Place back on sheet lined with parchment. Place in fridge until serving.
Ingredients
2 cups Rice Krispies
1 1/2 cups icing sugar
1/4 cup melted butter
1 1/4 cups peanut butter
Chocolate wafers
Direction
Mix icing sugar and rice krispies.
Half melt butter and add to mix.
Mix in peanut butter.
Form into balls.
Refrigerate
Melt chocolate chips.
Roll peanut butter balls in melted chocolate
Refrigerate until serving.
